Helen's Garlic Dill Pickles
Put a couple heads of fresh dill, 3 cloves of pealed garlic, 1 bay leaf in a clean quart jar. Pack with cucumbers up to neck of jar. Add 4 Tablespoons of white vinegar and 2 Tablespoons of canning salt. Pour boiling water over all to cover pickles. Put warm lid and ring on, shake a little and place upside down on the counter until cool. Let the pickles work on the counter for a couple of days, then keep in a cool dark place, or in the refrigerator.

The Mattas girls, Lil, Mayme and Amelia all had their recipes for pickles. But the favorite of many was Amelia's daughter, Helen Mize Rauscher's. Above is a picture of the shorten version written in Amelia's 1948 cookbook. At left is a picture of Helen, Circa 1940's.
At right is a longer version, given to me by Kathy Rauscher Hegge, Helen's daughter. Kathy also noted that if you like spicy pickles you can add some pepper flakes!
