Rhubarb Crunch
2 generous cups of diced rhubarb
6 tbs. flour
¼ cup rolled oats
3 cups granulated sugar
¼ cup brown sugar
¼ cup butter or butter substitute
Directions
Arrange rhubarb in greased pan.
Sprinkle with sugar mixed with 2 tbs. flour.
Blend brown sugar, rolled oats, remaining flour
and butter until like pie crust.
Sprinkle this crumbly mixture over rhubarb.
Bake 40 min. in slow oven (350 degrees) or until done.
Serve warm with ice cream or cold with cream.
Mayme Mattas , daughter of Vincencia and Joseph was born in 1900. She grew up on the family farm near Milltown, South Dakota. Rhubarb was plentiful there. Folks remember her as being progressive and independent . She was sweet with a touch of sassiness, the taste in her Rhubarb Crunch!
